
Avocado Deviled Eggs
These avocado deviled eggs are a fun twist on the traditional deviled eggs. Adding avocado to the egg yolk mixture makes these deviled eggs colorful and extra tasty! This appetizer is perfect for an Easter Brunch or for an easy side dish at a group gathering.

Ingredients
- 6 Hard Boiled Eggs I like to use my InstaPot to cook the eggs
- 2 mashed Ripe Avocados
- 1/2 cup Mayonnaise
- 1 teaspoon White Vinegar
- 1 teaspoon Yellow Mustard
- Dash Salt
- Dash Pepper
- Dash Blackened Seasoning (You can substitute for Paprika if you prefer)
- 1/2 Tablespoon Fresh Chopped Parsley

Instructions
- Start by peeling the Hard Boiled Eggs (see recipe notes for Insta Pot recipe I like to use)
- Next, slice Hard Boiled Eggs in half lengthwise. Place egg yolks in mixing bowl and the white part of the eggs on your serving platter.
- Then, mash the egg yolks with the rip avocados. After mixed together, add in the mayonnaise, vinegar, mustard, and salt and pepper.
- Using a spoon, carefully scoop the mixture into the egg whites on the serving platter.
- Sprinkle the deviled eggs with a blackened seasoning (or paprika) and then lightly sprinkle the freshly chopped parsley over the eggs and platter to serve.
