Peanut Butter Replaces the need for flour in this Gluten-Free Holiday Cookies Recipe
These gluten-free peanut butter holiday cookies are so good and also easy to make. They are very festive looking with the white chocolate chips and craisins. In fact, they’re so good it’s going to be hard to eat just one of these holidays cookies.
You may even find that this becomes a favorite cookie recipe all year round! These are so good that it’s hard to believe that there’s no flour involved in this delicious cookie recipe.
The one thing I will say though, is that these cookies require honey peanut butter. You will want to find a creamy and oily brand (I like Justin’s). Otherwise, these cookies will not be sweet enough nor have enough oil for them to stick together.
Whenever I make these gluten free peanut butter cookies, they are gone in no time!

- 2 cups creamy honey peanut butter* *I used Justin's Honey Peanut Butter
- 2 cups packed light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 tablespoons honey
- 2 tsps baking soda
- 2 cups white chocolate chips
- 1 cup craisins

- Heat oven to 350 degrees
- Gently mix peanut butter, sugar, and eggs.
- Mix in vanilla, honey, and baking soda. Mix until smooth.
- Fold in white chocolate chips and craisins.
- Using a tablespoon, drop cookie dough into round shaped balls onto uncreased cookie sheet (I use parchment paper for easier cleanup). Space cookies about 2 inches apart. Press the tops of the cookies down slightly.
- Bake for 12 to 14 minutes or until golden brown on the edges.
- Remove from oven and cool completely.
- Cookies can be kept at room temperature in an air tight container.
I've tried making this recipe with regular Organic Peanut Butter and the consistency of the cookies is not the same. They need the extra oil and honey for these cookies to come together! If you find that your dough is looking too crumbly to make into balls for baking, try adding a tiny bit of vegetable oil to the dough. Enjoy!
