Gluten Free Peanut Butter Holiday Cookies
Recipe Adapted from FabFitFun.TV/PeanutButter These gluten-free peanut butter holiday cookies are so easy to make. They are also very festive looking with the white chocolate chips and craisins. In fact, they’re so good it’s going to be hard to eat just one of these holidays cookies. You may even find that this becomes a favorite cookie recipe all year round!

Ingredients

  1. Heat oven to 350 degrees
  2. Gently mix peanut butter, sugar, and eggs.
  3. Mix in vanilla, honey, and baking soda. Mix until smooth.
  4. Fold in white chocolate chips and craisins.
  5. Using a tablespoon, drop cookie dough into round shaped balls onto uncreased cookie sheet (I use parchment paper for easier cleanup). Space cookies about 2 inches apart. Press the tops of the cookies down slightly.
  6. Bake for 12 to 14 minutes or until golden brown on the edges.
  7. Remove from oven and cool completely.
  8. Cookies can be kept at room temperature in an air tight container.
Recipe Notes

I’ve tried making this recipe with regular Organic Peanut Butter and the consistency of the cookies is not the same. They need the extra oil and honey for these cookies to come together! If you find that your dough is looking too crumbly to make into balls for baking, try adding a tiny bit of vegetable oil to the dough. Enjoy!
